Ingredients
For the dough:
- 125 g butter
- 2 eggs
- 125 g self-raising flour
- Zest of 1 lime
- Zest of 1 lemon
- 4 tbsp. tonic
- Extra 50 ml tonic
- 50 ml The Ghentist gin
- 125 g zùsto *
- Additional 50 g zùsto
*Zùsto is a healthy alternative for sugar. Would you rather make the cupcakes with normal sugar? You can use a 1:1 ratio when it comes to the weight
For the topping:
- 20 g flour
- 120 g milk
- 100 g butter
- 100 g zùsto
- 2 tbsp. gin
Preparation method
For the dough:
- Beat the butter and zùsto (125 g) (125 g) .
- Add the eggs to the mix
- Add the self-raising flour, the zest and the 4 tbsp of tonic to the mix
- Pour the batter into small cupcake tins
- Putnthese in the oven for 20 minutes on 180 degrees;
- Make the syrup by boiling a mix of the gin, tonic (both 50 ml) and zùsto (50 g) ..
- Wait until everything has dissolved and then reduce the heat and let it simmer for fifteen minutes.
- Make sure that this syrup stays fluid. It must be liquid so that the cakes can soak it up later..
- Once the cakes are ready, poke some holes in them with a fork or toothpick.
- Pour the syrup over the cakes and let it soak.
- Allow it to cool for a while.
For the toppings:
- Fill a pan with the milk and the flour and let it boil while stirring.
- Let it thicken for. Let it thicken for 5 minutes.
- Pour it into another bowl and let it cool down to room temperature.
- Meanwhile, beat the butter and the zùsto in a bowl;
- Add the gin;
- Once the flour mix has cooled, add it to the butter-zùsto mix as well.
- Optional: spread the crème in half and add yelow coloring to one batch.
- Put the butter crème in the fridge for half an hour and then use it to decorate the cupcakes.
